  • 3 lbs boneless pork shoulder
  • 20 oz pineapple chunks (canned, with juice)
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tbsp rice vinegar
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, sliced (for garnish)

Directions

Step 1

Place the boneless pork shoulder in the bottom of your crock pot.

Step 2

Add the pineapple chunks along with their juice to the crock pot.

Step 3

In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, and minced ginger. Pour this mixture over the pork.

Scatter the sliced red bell pepper and yellow onion over the pork and sauce mixture.
