Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 can (20 oz) pineapple chunks (with juice)
  • 1.5 cups barbecue sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1 piece red bell pepper, chopped
  • 1 piece green bell pepper, chopped
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Place the chicken breasts in the bottom of your crock pot.

Step 2

In a medium mixing bowl, combine the barbecue sauce, pineapple chunks (with juice), soy sauce, brown sugar, and garlic powder. Mix well.

Step 3

Pour the sauce mixture over the chicken breasts, ensuring they are fully coated.

Step 4

Add the chopped red and green bell peppers on top of the chicken.

Step 5

Cover the crock pot with its lid and cook on low for 5-6 hours or on high for 3-4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F).

Step 6

Once cooked, carefully shred the chicken using two forks, or leave the pieces whole if preferred.

Step 7

In a small bowl, whisk together the cornstarch and cold water to make a slurry. Add this mixture to the sauce in the crock pot and stir well.

Step 8

Continue cooking on high for an additional 10-15 minutes, or until the sauce thickens.

Step 9

Serve the Hawaiian chicken and sauce over cooked white rice. Enjoy!
