Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery stalks, diced
  • 2 medium potatoes, peeled and cut into small cubes
  • 28 ounces canned diced tomatoes (with juice)
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef until browned. Break it up into small pieces as it cooks. Drain any excess fat and transfer the browned beef to the crock pot.

Step 2

In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until softened and fragrant. Add them to the crock pot.

Step 3

To the crock pot, add the diced carrots, celery, and potatoes.

Step 4

Pour in the canned diced tomatoes (with their juice), tomato paste, and beef broth.

Step 5

Add the Worcestershire sauce, dried basil, dried oregano, salt, and black pepper. Stir everything together to combine.

Step 6

Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the flavors have melded together.

Step 7

About 30 minutes before the cooking time is up, stir in the frozen peas. Allow them to heat through.

Step 8

Taste the soup and adjust seasoning if needed.

Step 9

Serve hot, garnished with fresh parsley if desired. Enjoy!
