Ingredients

  • 6 medium Russet potatoes
  • 2 cups Cooked ham
  • 1 medium Onion
  • 2 cups Cheddar cheese
  • 1 can Cream of mushroom soup
  • 1 cup Milk
  • 2 tablespoons Butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Parsley (optional)

Directions

Step 1

Peel and thinly slice the russet potatoes into 1/8-inch thick rounds. Set aside in a bowl of cold water to prevent browning.

Step 2

Cut the cooked ham into bite-sized cubes or strips. Dice the onion into small pieces.

Step 3

In a medium mixing bowl, combine the cream of mushroom soup, milk, melted butter, garlic powder, salt, and black pepper. Whisk until smooth.

Step 4

Grease the inside of your crock pot with nonstick spray or a small amount of butter to prevent sticking.

Step 5

Layer half of the sliced potatoes in the bottom of the crock pot, overlapping slightly.

Step 6

Top the potatoes with half of the diced onion and half of the ham cubes.

Step 7

Sprinkle 1 cup of shredded cheddar cheese evenly over the layer.

Step 8

Pour half of the soup mixture over the cheese, spreading it slightly to coat the layers evenly.

Step 9

Repeat the layers with the remaining potatoes, onion, ham, cheese, and soup mixture.

Step 10

Cover the crock pot with the lid and cook on LOW for 5-6 hours, or until the potatoes are tender when pierced with a fork.

Step 11

Once cooked, sprinkle the surface with chopped parsley for a touch of freshness, if desired.

Step 12

Serve warm and enjoy this comforting dish with your favorite sides or a fresh salad!
