Ingredients

  • 1 pound Dried navy beans
  • 1 Ham hock or leftover ham bone
  • 1.5 cups Cooked ham, diced
  • 1 large Carrot, diced
  • 1 large Celery stalk, diced
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 Bay leaf
  • 0.5 teaspoons Dried thyme
  • 6 cups Chicken broth
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the dried navy beans thoroughly and sort through them to remove any debris or damaged beans.

Step 2

Place the beans in a large bowl, cover them with water, and soak overnight (8–12 hours). Drain and rinse before using.

Step 3

In the crock pot, add the drained beans, ham hock or bone, diced cooked ham, diced carrot, diced celery, diced onion, minced garlic, and bay leaf.

Step 4

Sprinkle the dried thyme, salt, and black pepper over the mixture.

Step 5

Pour the chicken broth into the crock pot, ensuring the beans and other ingredients are fully submerged.

Step 6

Set the crock pot to LOW and cook for 8–10 hours, or until the beans are tender and the flavors are well-developed. Stir occasionally, if possible.

Step 7

Once cooked, remove the ham hock or bone. If it has usable meat, shred it and return it to the pot, discarding the bone.

Step 8

Taste and adjust seasonings if needed, adding more salt or pepper to taste.

Step 9

Serve warm, garnished with chopped parsley, alongside crusty bread or cornbread for a complete meal.
