  • 1 pound Dried navy beans
  • 1 piece Ham bone or ham hocks
  • 2 cups Cooked diced ham
  • 2 large Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 8 cups Chicken broth
  • 2 leaves Bay leaves
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Parsley, chopped (optional for garnish)

Directions

Step 1

Rinse the dried navy beans under cold water and remove any debris or damaged beans. Place the beans in a large bowl, cover with water, and soak overnight. Drain and rinse before using.

Step 2

In the base of a large crock pot, add the ham bone or ham hocks, soaked and drained navy beans, diced carrots, diced celery, diced onion, and minced garlic.

Step 3

Pour in the chicken broth so all the ingredients are submerged. Add the bay leaves, thyme, salt, and black pepper.

Cover the crock pot with its lid and cook on low heat for 8-10 hours, or until the beans are tender and the flavors are well combined.
