  • 3 large carrots
  • 2 celery stalks
  • 1 medium yellow onion
  • 3 garlic cloves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Brown the ground beef in the skillet, breaking it up into small pieces as it cooks. Once browned, drain any excess fat.

Peel and dice the potatoes into bite-sized chunks. Slice the carrots into thin rounds. Dice the celery and onion. Mince the garlic cloves.

Step 4

In the crock pot, combine the browned ground beef, potatoes, carrots, celery, onion, and garlic.

Step 5

Pour in the beef broth, and stir in the tomato paste, Worcestershire sauce, dried thyme, dried parsley, salt, and black pepper until well mixed.

Step 6

Cover the crock pot with its lid and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

Step 7

Taste the stew and adjust the seasoning if necessary by adding more salt and pepper.

Step 8

Serve hot in bowls, optionally garnished with a sprinkle of fresh parsley for color.
