  • 3 pounds boneless pork shoulder (or pork butt)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 16 ounces green enchilada sauce
  • 8 ounces diced green chiles
  • 1 cup chicken broth
  • 0.5 cup fresh cilantro, chopped
  • 1 tablespoon lime juice

Directions

Step 1

Trim excess fat from the pork shoulder and cut it into large chunks (about 3-4 inches).

Step 2

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and cumin. Rub this seasoning mix evenly over the pork pieces.

Step 3

Heat olive oil in a large skillet over medium-high heat. Sear the pork chunks on all sides until browned, about 2-3 minutes per side. Transfer the seared pork to the Crock Pot.

Step 4

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for an additional minute. Transfer the onion and garlic mixture to the Crock Pot.
