Ingredients

  • 2 pounds Pork shoulder (or pork butt)
  • 4 medium Sweet potatoes
  • 6 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 3 sprigs Fresh rosemary
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Peel the sweet potatoes and cut them into 1-inch cubes. Set aside.

Step 2

Peel and finely mince 4 garlic cloves. Leave the remaining 2 cloves whole.

Step 3

Season the pork shoulder with salt, black pepper, paprika, and ground cumin, evenly coating all sides.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the pork shoulder on all sides until golden brown, about 2-3 minutes per side. Remove from heat.
