Ingredients

  • 3 pounds Russet potatoes
  • 4 whole Garlic cloves
  • 6 tablespoons Unsalted butter
  • 1 cup Half-and-half
  • 0.5 cup Sour cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks, approximately 2 inches each. Rinse the potato chunks under cold water to remove excess starch.

Step 2

Peel the garlic cloves, leaving them whole.

Step 3

Add the chopped potatoes and whole garlic cloves to the crock pot. Pour in 1/4 cup of the half-and-half and scatter 4 tablespoons of butter (cut into small pieces) over the potatoes.

Step 4

Season with the salt and black pepper. Cover the crock pot with the lid and cook on HIGH for 4 hours or on LOW for 6-8 hours, until the potatoes are fork-tender.

Once the potatoes are cooked, add the remaining butter (2 tablespoons), the half-and-half, and the sour cream directly into the crock pot.
