Ingredients

  • 2 whole Cornish game hens
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 garlic cloves, minced
  • 1 lemon, cut into wedges
  • 4 fresh rosemary sprigs
  • 1 cup chicken broth
  • 0.5 teaspoon paprika
  • 1 large onion, sliced
  • 4 medium carrots, peeled and cut into chunks
  • 3 celery stalks, cut into chunks

Directions

Step 1

Rinse the Cornish game hens under cold water and pat them dry with paper towels.

Step 2

Rub the outside of each game hen with 1 tablespoon of olive oil. Season both the inside and outside of the hens with salt, black pepper, and paprika.

Step 3

Stuff the cavity of each hen with 2 minced garlic cloves, 2 rosemary sprigs, and 1-2 lemon wedges.

Step 4

Layer the bottom of the crock pot with the sliced onion, carrot chunks, and celery chunks to create a base for the hens.

Step 5

Place the game hens on top of the vegetables in the crock pot, breast side up.

Step 6

Pour the chicken broth into the crock pot, ensuring the bottom is well-covered to prevent burning.

Step 7

Cover the crock pot with its lid and cook on the low setting for 4 hours, or until the internal temperature of the hens reaches 165°F (74°C).

Step 8

For a crispy skin, transfer the hens to a baking sheet at the end of the cooking time and place them under the broiler for 2-3 minutes, watching carefully to prevent burning.

Step 9

Serve the game hens warm with the cooked vegetables and any juices from the crock pot as a flavorful sauce.
