Ingredients

  • 6 large (about 3 lbs total) Yellow onions
  • 4 tablespoons Butter
  • 2 minced Garlic cloves
  • 6 cups Beef broth
  • 1 cup Dry white wine
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon (dried) Thyme
  • 2 Bay leaves
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 1 loaf (sliced) Baguette
  • 2 cups (shredded) Gruyère cheese

Directions

Step 1

Peel and slice the onions thinly into half-moon shapes.

Step 2

Add the sliced onions and 4 tablespoons of butter to the crock pot. Stir to coat the onions in butter.

Step 3

Cover and cook on low for 8 hours, stirring once or twice if possible, until the onions are deeply caramelized.

Step 4

Once the onions are caramelized, add the minced garlic, beef broth, white wine, Worcestershire sauce, dried thyme, bay leaves, salt, and black pepper to the crock pot. Stir to combine.

Step 5

Cover and cook on low for another 2 hours to meld the flavors.

Step 6

Preheat your oven to 400°F (200°C). Place the baguette slices on a baking sheet and toast for 5 minutes per side, or until golden brown.

Step 7

When ready to serve, ladle the soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl and sprinkle generously with shredded Gruyère cheese.

Step 8

Place the bowls under the broiler in your oven for 3-5 minutes, or until the cheese is melted and bubbly.

Step 9

Carefully remove the bowls from the oven (they will be very hot) and serve immediately.
