Ingredients

  • 4 pieces Boneless, skinless chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 2 medium Carrots, peeled and sliced
  • 2 pieces Celery stalks, sliced
  • 0.75 cup Pearl barley
  • 4 cups Low-sodium chicken broth
  • 0.5 cup Dry white wine
  • 1 teaspoon Dried thyme
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Lightly season the chicken thighs with salt and pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes on each side until golden brown. Remove and set aside.

In the same skillet, add the chopped onion, minced garlic, carrots, and celery. Sauté for 3-4 minutes until softened and aromatic.
