  • 2 pounds beef chuck roast
  • 1 large yellow onion
  • 4 medium carrots
  • 3 medium russet potatoes
  • 2 celery stalks
  • 3 garlic cloves
  • 4 cups beef broth
  • 3 tablespoons tomato paste
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 cup frozen peas

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes, trimming off excess fat.

Step 2

Peel and dice the onion. Peel and slice the carrots into 1/2-inch rounds. Cut the potatoes into 1-inch cubes. Slice the celery stalks. Mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Lightly dredge the beef cubes in the flour and sear them in batches until browned on all sides, about 3-4 minutes per batch. Transfer the browned beef to the crock pot.

Step 4

Layer the onion, carrots, potatoes, and celery over the beef in the crock pot.

In a medium bowl, whisk together the beef broth, tomato paste, worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper.
