Ingredients

  • 3 pounds Beef chuck roast
  • 1 cup Dill pickle juice
  • 1 cup Beef broth
  • 2 tablespoons Fresh dill
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground mustard
  • 8 buns Sandwich buns
  • 2 tablespoons Butter (optional, for toasting buns)
  • 8 slices Provolone or Swiss cheese (optional)

Directions

Step 1

Trim any excess fat from the beef chuck roast and place it in the crock pot.

Step 2

In a medium bowl, combine the dill pickle juice, beef broth, minced garlic, salt, black pepper, onion powder, and ground mustard. Pour this mixture over the beef in the crock pot.

Step 3

Sprinkle the fresh dill over the top of the beef.

Step 4

Cover and cook on low heat for 8 hours, or until the beef is fork-tender and can be easily shredded.

Step 5

Once cooked, remove the beef from the crock pot and shred it using two forks. Return the shredded beef to the crock pot and stir it into the juices to keep it moist and flavorful.

Step 6

If desired, lightly butter the sandwich buns and toast them on a skillet or in the oven until golden brown.

Step 7

Assemble the sandwiches by layering the shredded beef onto the bottom half of each bun. Top with a slice of provolone or Swiss cheese, if using, and add the top half of the bun.

Step 8

Serve warm and enjoy!
