Ingredients

  • 3 pounds Chuck roast
  • 1 cup Beef broth
  • 1 cup Dill pickle juice
  • 4 Dill pickle spears
  • 3 Garlic cloves, minced
  • 1 Yellow onion, thinly sliced
  • 2 teaspoons Dried dill weed
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 6 Sub rolls or sandwich buns
  • 6 Provolone or Swiss cheese slices (optional)

Directions

Step 1

Trim any excess fat from the chuck roast and place it in the crock pot.

Step 2

Pour the beef broth and dill pickle juice over the roast.

Step 3

Add the minced garlic, sliced onion, and dill pickle spears to the pot, arranging them around the meat.

Step 4

Sprinkle the dried dill weed, salt, black pepper, and crushed red pepper flakes (if using) evenly over the roast and liquid.

Step 5

Cover the crock pot with the lid and cook on LOW for 8 hours or until the beef is tender and shreds easily with a fork.

Step 6

Once cooked, remove the roast from the crock pot and shred it using two forks, discarding any large pieces of fat.

Step 7

Return the shredded beef to the crock pot and stir it into the juices to keep it moist and flavorful.

Step 8

Serve the dilly beef warm on sub rolls or sandwich buns. Add a slice of provolone or Swiss cheese, if desired, and let it melt slightly.

Step 9

Optionally, garnish with additional sliced dill pickles for an extra tangy kick.
