Ingredients

  • 1 4-5 lbs Whole chicken
  • 2 teaspoons Paprika
  • 1 teaspoons Garlic powder
  • 1 teaspoons Onion powder
  • 1 teaspoons Dried thyme
  • 2 teaspoons Salt
  • 1 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion

Directions

Step 1

Remove any giblets from the cavity of the chicken and pat the chicken dry with paper towels.

Step 2

In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, salt, and black pepper.

Step 3

Rub the chicken all over with olive oil, including under the skin if possible. Then generously apply the spice mixture to the chicken, coating it evenly.

Step 4

Peel and quarter the yellow onion and place the pieces at the bottom of the crock pot. This will act as a 'rack' for the chicken, allowing air to circulate and prevent the chicken from sitting in its juices.

Step 5

Place the chicken breast-side up on top of the onion pieces in the crock pot.

Cover and cook on high for 4-5 hours, or on low for 7-8 hours, until the internal temperature of the chicken reaches 165°F (74°C).
