Ingredients

  • 20 ounces cheese tortellini (refrigerated or frozen)
  • 1 pound Italian sausage
  • 1 yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 28 ounces canned diced tomatoes (undrained)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese, grated
  • 2 cups baby spinach leaves
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

In a skillet over medium heat, heat the olive oil. Add the Italian sausage, breaking it apart with a spoon, and cook until browned. Drain any excess grease and transfer the sausage to your crock pot.

Add the diced onion, carrots, celery, minced garlic, and canned diced tomatoes (with their juices) to the crock pot.

Pour in the chicken broth, and add the dried basil, salt, and black pepper. Stir the ingredients well to combine.
