Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 can Black beans, drained and rinsed
  • 1 can Corn kernels, drained (or frozen corn)

  • 8 oz Cream cheese, softened
  • 1 cup Chicken broth
  • 1 packet Ranch seasoning mix
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 cup Shredded cheddar cheese (optional, for serving)
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Place the chicken breasts in the bottom of the crock pot.

Add the black beans, corn, and diced tomatoes with green chilies on top of the chicken.
