Ingredients

  • 16 ounces elbow macaroni
  • 12 ounces evaporated milk
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 cups shredded sharp cheddar cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 tablespoons unsalted butter, cubed
  • 4 ounces cream cheese, cubed
  • 0.25 teaspoon dry mustard powder (optional)

Directions

Step 1

Spray the inside of your crock pot with non-stick cooking spray or lightly grease it with butter to prevent sticking.

Step 2

Cook the elbow macaroni according to the package instructions, but reduce the cooking time by 1-2 minutes to keep the pasta slightly undercooked. Drain and rinse with cold water to stop the cooking process.

Step 3

In the crock pot, combine the evaporated milk, whole milk, heavy cream, salt, pepper, garlic powder, and optional dry mustard powder. Stir well.

Step 4

Add the cooked elbow macaroni to the crock pot, ensuring it is evenly coated with the liquid mixture.

Step 5

Stir in the shredded sharp cheddar, mozzarella, and Parmesan cheeses. Mix gently to distribute the cheeses evenly.

Step 6

Add the cubed butter and cream cheese, distributing them throughout the mixture.

Step 7

Cover the crock pot with the lid and set it to LOW heat. Cook for 2 to 2.5 hours, stirring every 30-45 minutes to ensure the mixture is smooth and the cheese is melting evenly.

Step 8

Check for consistency after about 2 hours. If the mac and cheese is creamy and heated through, it's ready to serve. If it seems too thick, stir in an additional splash of milk to loosen it up.

Step 9

Once the mac and cheese is fully cooked and creamy, taste and adjust seasonings with more salt or pepper if needed.

Step 10

Serve immediately, garnished with a sprinkle of extra Parmesan or chopped parsley if desired.
