  • 2 pounds Beef stew meat
  • 1 large Yellow onion
  • 4 cloves Garlic cloves

  • 1 14-ounce can Canned diced tomatoes
  • 1 13.5-ounce can Coconut milk
  • 2 tablespoons Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garam masala
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.25 cup Fresh cilantro
  • 1 whole Fresh lime

Directions

Step 1

Dice the yellow onion and mince the garlic and ginger.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the beef stew meat on all sides until brown. Do this in batches if necessary to avoid overcrowding. Transfer the seared beef to the crock pot.
