Ingredients

  • 8 cups Fresh spinach
  • 1 medium Yellow onion
  • 3 Garlic cloves
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 4 ounces Cream cheese
  • 0.25 teaspoons Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Wash the spinach thoroughly and set it aside to drain.

Step 2

Dice the onion finely and mince the garlic cloves.

Step 3

In a medium skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant. Remove from heat.

Step 4

In the crock pot, combine the sautéed onion and garlic, spinach, vegetable broth, salt, black pepper, and nutmeg.

Step 5

Cover the crock pot and cook on low for 4 hours, stirring once halfway through to ensure the spinach is evenly cooked.

Step 6

After 4 hours, stir in the cream cheese and heavy cream. Use an immersion blender directly in the crock pot to blend the soup until smooth. Alternatively, transfer the mixture in batches to a blender, blend until smooth and creamy, and return to the crock pot.

Step 7

Taste and adjust seasoning if needed by adding more salt or pepper.

Step 8

Let the soup sit on the warm setting for 10-15 minutes before serving to allow the flavors to meld.

Step 9

Serve hot with a garnish of additional nutmeg or a swirl of cream if desired, and enjoy!
