Ingredients

  • 3 lbs beef brisket
  • 14 oz cranberry sauce
  • 1 large yellow onion, sliced thin
  • 1 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp Dijon mustard
  • 3 cloves garlic cloves, minced
  • 2 tbsp apple cider vinegar
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Directions

Step 1

Pat the brisket dry with paper towels and season both sides evenly with 1 tsp of kosher salt and 1 tsp of black pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the brisket for 3-4 minutes per side until browned. Remove and set aside.

Step 3

Place the sliced onions in the bottom of the Crock Pot to create a base layer.

Step 4

In a medium bowl, whisk together the cranberry sauce, beef broth, brown sugar, Dijon mustard, minced garlic, apple cider vinegar, and the remaining 1 tsp of kosher salt.

Step 5

Pour half of the cranberry mixture over the onions in the Crock Pot.

Step 6

Place the seared brisket on top of the onions and sauce layer in the Crock Pot.

Step 7

Pour the remaining cranberry mixture over the brisket, ensuring it is coated evenly.

Step 8

Cover the Crock Pot and cook on low for 8 hours, or until the brisket is tender and pulls apart easily with a fork.

Step 9

Once done, transfer the brisket to a cutting board and let it rest for about 10 minutes before slicing against the grain.

Step 10

Serve the brisket with the sauce and onions spooned over the top, alongside your favorite sides.
