Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 minced garlic cloves
  • 28 ounces baked beans (canned)
  • 14 ounces diced tomatoes (canned, with juice)
  • 15 ounces kidney beans (canned, drained and rinsed)
  • 1 cup frozen corn kernels
  • 1 cup beef broth
  • 1 cup barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat a large skillet over medium-high heat and add olive oil.

Step 2

Add ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon as it cooks. Drain any excess fat and transfer the beef to the crock pot.

Step 3

In the same skillet, sauté the diced onion until softened, about 3 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant. Transfer the onions and garlic to the crock pot.

Step 4

To the crock pot, add the baked beans, diced tomatoes (with their juice), kidney beans (drained and rinsed), frozen corn, and beef broth.

Step 5

Stir in barbecue sauce, Worcestershire sauce, brown sugar, chili powder, smoked paprika, salt, and black pepper until well combined.

Step 6

Cover the crock pot with the lid and cook on low heat for 6 hours, or on high heat for 3 hours, stirring occasionally.

Step 7

After the cooking time is complete, taste the stew and adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve warm in bowls with your choice of toppings such as shredded cheese, chopped green onions, or a drizzle of extra barbecue sauce.
