Ingredients

  • 2 pounds Country-style pork ribs
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, thinly sliced
  • 2 medium Granny Smith apples, cored and sliced
  • 2 cups Sauerkraut, drained
  • 2 tablespoons Brown sugar
  • 1 cup Apple cider
  • 1 teaspoon Caraway seeds
  • 2 cloves Garlic, minced
  • 1 piece Bay leaf

Directions

Step 1

Season the country-style pork ribs with salt and black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the ribs on each side until browned, about 2-3 minutes per side. Transfer the ribs to the crock pot.

Step 3

In the same skillet, sauté the sliced onion until softened, about 3-4 minutes. Add the onions to the crock pot on top of the ribs.

Step 4

Layer the sliced apples and drained sauerkraut over the onions and ribs.

Step 5

Sprinkle the brown sugar and caraway seeds evenly over the sauerkraut and apples.

Step 6

In a small bowl, combine the apple cider and minced garlic. Pour the liquid mixture into the crock pot.

Step 7

Add the bay leaf to the crock pot. Cover and cook on low for 7 hours or on high for 4 hours, until the ribs are tender and fully cooked.

Step 8

Before serving, remove the bay leaf and give the sauerkraut and apples a gentle stir. Serve the ribs hot with the sauerkraut and apples on the side.
