Ingredients

  • 2 lbs Country-style pork ribs
  • 32 oz Sauerkraut
  • 2 tbsp Brown sugar
  • 1 medium Yellow onion, sliced
  • 1 tsp Caraway seeds
  • 1 medium Apple, cored and sliced
  • 1 cup Chicken broth
  • 2 tbsp Butter
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.5 tsp Garlic powder

Directions

Step 1

Start by seasoning the country-style pork ribs with salt, black pepper, and garlic powder on all sides.

Step 2

In a skillet over medium-high heat, melt the butter and sear the ribs for 2-3 minutes per side until browned. This step is optional but adds extra flavor.

Step 3

While the ribs are searing, drain the sauerkraut in a colander, pressing lightly to remove excess liquid.

Step 4

In the bottom of your crock pot, layer the sliced onion and apple slices evenly.

Step 5

Add the drained sauerkraut on top of the onion and apple layer.

Step 6

Sprinkle the brown sugar and caraway seeds over the sauerkraut.

Step 7

Place the seared pork ribs on top of the sauerkraut mixture.

Step 8

Pour the chicken broth over everything to ensure moisture during cooking.

Step 9

Cover the crock pot with its lid and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the ribs are tender and the flavors have melded together.

Step 10

Once cooked, taste the sauerkraut mixture and adjust the seasoning with additional salt or black pepper if necessary.

Step 11

Serve the ribs hot alongside the sauerkraut and enjoy!
