  • 3 pounds corned beef brisket with spice packet
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and cut into chunks
  • 2 medium yellow onions, quartered
  • 6 medium Yukon Gold potatoes, halved
  • 4 cups beef broth
  • 2 cups water
  • 1 head green cabbage, cut into wedges
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Place the corned beef brisket into the crock pot, fat side up. Sprinkle the contents of the spice packet over the brisket.

Step 2

Rub the brown sugar and minced garlic onto the brisket for added flavor.

Step 3

Layer the carrots, onions, and potatoes around and under the brisket.

Step 4

Pour the beef broth and water into the crock pot, ensuring the brisket and vegetables are mostly submerged.

Step 5

Cover the crock pot with the lid and cook on LOW for 8 hours, or HIGH for 4-5 hours.

Step 6

After the initial 7 hours of cooking (on LOW), add the cabbage wedges on top of the brisket and vegetables.

Cover again and continue cooking for the remaining 1 hour, or until the cabbage is tender.

Once done, remove the corned beef from the crock pot and let it rest for 10 minutes before slicing.
