  • 3 pounds corned beef brisket
  • 4 medium carrots, peeled and cut into 2-inch pieces

  • 4 cups beef broth
  • 2 leaves bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds (optional)
  • 1 packet seasoning packet (from the corned beef brisket)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Unwrap the corned beef brisket and rinse it under cold water to remove excess salt. Pat it dry with paper towels.

Step 2

Place the brisket in the bottom of a large crock pot. Sprinkle the seasoning packet that came with the corned beef over the top.

Add the minced garlic, quartered onion, carrots, and potatoes to the crock pot, arranging them around the brisket.

Pour the beef broth into the crock pot, ensuring it partially covers the brisket and vegetables. Add the bay leaves, peppercorns, and mustard seeds (if using).
