Ingredients

  • 1 pound Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced

  • 1 15-ounce can Canned corn, drained
  • 1 15-ounce can Black beans, rinsed and drained
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1.5 cups Shredded cheddar cheese
  • 1 8.5-ounce package Cornbread mix
  • 0.33 cup Milk
  • 1 large Egg
  • 2 tablespoons Unsalted butter, melted
  • 2 tablespoons Chopped green onions (for garnish, optional)

Directions

Step 1

In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.

Step 2

Add diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onions are softened and translucent.

Stir in the diced tomatoes, tomato sauce, canned corn, black beans, chili powder, cumin, and salt. Cook for an additional 2-3 minutes until well combined. Remove from heat.
