Ingredients

  • 2 cups sweet corn (canned, drained)
  • 2 cups creamed corn
  • 2 large eggs
  • 1 cup sour cream
  • 0.5 cup unsalted butter (melted)
  • 0.25 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup shredded cheddar cheese (optional)

Directions

Step 1

Lightly grease the inside of a 4–6 quart crock pot with non-stick spray or butter to prevent sticking.

In a large mixing bowl, combine the sweet corn, creamed corn, eggs, sour cream, melted butter, and sugar. Stir until fully incorporated.

In a separate bowl, whisk together the flour, baking powder, and salt to evenly distribute the dry ingredients.

Gradually add the dry mixture to the wet mixture, stirring until smooth. If using shredded cheddar cheese, mix it in at this stage.

Step 5

Pour the batter into the prepared crock pot, spreading it evenly.
