  • 6 bone-in, skin-on chicken thighs
  • 4 slices bacon
  • 1 yellow onion, diced
  • 3 carrots, peeled and sliced into rounds
  • 4 garlic cloves, minced
  • 8 oz button or cremini mushrooms, sliced
  • 1.5 cups dry red wine
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 4 fresh thyme sprigs
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp parsley, chopped (for garnish)

Directions

Step 1

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon, crumble it, and set it aside. Leave about 1 tablespoon of bacon grease in the skillet.

Step 2

Season the chicken thighs with salt and pepper. Sear the chicken skin-side down in the bacon grease over medium-high heat for about 4 minutes per side, or until golden brown. Transfer the chicken to the slow cooker.

Step 3

In the same skillet, add olive oil if needed. Sauté the onion, carrots, and garlic for 3-4 minutes until softened. Sprinkle the flour over the vegetables and stir for 1 minute to cook off the raw taste.

Stir in the tomato paste, then pour in the red wine. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Let the mixture simmer for 2-3 minutes.
