Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 28 ounces canned diced tomatoes
  • 15 ounces canned tomato sauce
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 0.5 cup sour cream (optional, for garnish)
  • 2 tablespoons green onions, sliced (optional, for garnish)

Directions

Step 1

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up into crumbles with a wooden spoon, about 6–8 minutes. Drain any excess fat.

Step 2

Add the diced onion, green bell pepper, and minced garlic to the skillet with the browned beef. Sauté for 3–4 minutes until the vegetables soften slightly.

Step 3

Transfer the beef and vegetable mixture to the crock pot.

Step 4

Add the diced tomatoes (with their juice), tomato sauce, kidney beans, black beans, beef broth, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper to the crock pot. Stir everything well to combine.

Step 5

Cover the crock pot and cook on LOW for 6–8 hours or on HIGH for 3–4 hours.

Step 6

Once the chili is cooked, taste and adjust seasonings as needed with more salt, pepper, or chili powder.

Step 7

Serve hot in bowls, and if desired, top with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of sliced green onions.

Step 8

Enjoy your Crock Pot Colts Fan Chili and cheer on your team!
