Ingredients

  • 4 lbs Pork shoulder (or pork butt)
  • 12 oz Coca-Cola
  • 1 cup Barbecue sauce
  • 1 large Onion
  • 3 Garlic cloves
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Smoked paprika
  • 1 tsp Onion powder
  • 8 Buns or rolls (optional, for serving)
  • 2 cups Coleslaw (optional, for serving)

Directions

Step 1

Peel and slice the onion into thin rings and place them at the bottom of the crock pot in an even layer.

Step 2

Mince the garlic cloves and add them on top of the onion layer.

Step 3

In a small bowl, mix the salt, pepper, smoked paprika, and onion powder. Rub this seasoning mixture all over the pork shoulder.

Step 4

Place the seasoned pork shoulder on top of the onions and garlic in the crock pot.

Step 5

Pour the Coca-Cola evenly over the pork shoulder.

Step 6

Cover the crock pot with the lid and cook on LOW for 8 hours or until the pork is tender and easily shredded with a fork.

Step 7

Once cooked, carefully remove the pork from the crock pot and place it on a large cutting board or tray.

Step 8

Shred the pork using two forks, discarding any excess fat or bone.

Step 9

Drain most of the liquid from the crock pot, leaving about 1/2 cup to keep the pork moist.

Step 10

Return the shredded pork to the crock pot and add 1 cup of barbecue sauce. Stir to combine and heat on LOW for an additional 15-20 minutes.

Step 11

Serve the pulled pork on buns or rolls with coleslaw on top, if desired. Enjoy!
