Ingredients

  • 3 6.5-ounce cans Canned clams (with juice)
  • 4 cups Potatoes, peeled and diced
  • 1 medium Onion, finely chopped
  • 1 cup Celery, diced
  • 1 medium Carrot, shredded
  • 2 cups Chicken broth
  • 2 cups Heavy cream
  • 4 tablespoons Butter
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Thyme, dried
  • 4 slices Bacon, crumbled (optional topping)
  • 2 tablespoons Chopped parsley (garnish)

Directions

Step 1

In a crock pot, combine the diced potatoes, onion, celery, carrot, chicken broth, salt, pepper, and thyme.

Step 2

Drain the clam juice from the canned clams into the crock pot (reserve the clams for later). Stir everything well.

Step 3

Cover and cook on low heat for 4 hours or until the potatoes are tender.

Step 4

Once the vegetables are cooked, melt the butter in a small microwave-safe bowl or saucepan.

Step 5

In a separate small bowl, whisk together the cornstarch and cold water to create a smooth slurry.

Step 6

Add the heavy cream, melted butter, and cornstarch slurry to the crock pot. Stir to combine.

Step 7

Gently fold in the reserved clams and let the chowder cook on low for another 30 minutes to thicken and heat through.

Step 8

Taste and adjust the seasonings, adding extra salt or pepper as needed.

Step 9

Serve warm, topped with crumbled bacon (if using) and a sprinkle of fresh parsley.
