Ingredients

  • 32 oz Sauerkraut
  • 1 lb Smoked sausage (kielbasa or similar)
  • 1 lb Bratwurst or other mild sausages
  • 1.5 lb Yukon Gold potatoes
  • 1 large Onion, thinly sliced
  • 3 Garlic cloves, minced
  • 1 cup Dry white wine
  • 1 cup Chicken broth
  • 1 tsp Caraway seeds
  • 2 Bay leaves
  • 0.5 tsp Black pepper, freshly ground
  • 4 oz Smoked bacon, chopped
  • 1 medium Apple (optional, peeled and diced)
  • 1 tbsp Olive oil

Directions

Step 1

Rinse and drain the sauerkraut thoroughly to reduce its acidity. Set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Add the sliced onion to the skillet and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more. Transfer the onion and garlic mixture to the crock pot.

Step 4

Layer the sauerkraut over the onion and garlic mixture in the crock pot. Sprinkle with the caraway seeds, bay leaves, and black pepper. If using, add the diced apple for a subtle sweetness.

Step 5

Nestle the smoked sausage, bratwurst, and potatoes into the sauerkraut mixture. The potatoes can be left whole if small, or halved if larger.

Pour in the white wine and chicken broth. Scatter the reserved cooked bacon over the top.
