Ingredients

  • 1 cup All-purpose flour
  • 0.75 cup Granulated sugar
  • 0.33 cup Unsweetened cocoa powder (divided)
  • 2 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Whole milk
  • 3 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 0.5 cup Packed brown sugar
  • 1.75 cups Hot water
  • 0.5 cup Semi-sweet chocolate chips (optional)

Directions

Step 1

Grease the inside of a 4-quart crock pot lightly with non-stick cooking spray or butter.

Step 2

In a medium mixing bowl, whisk together the flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt.

Step 3

Stir in the milk, melted butter, and vanilla extract until the mixture is smooth and well combined. Pour the batter into the prepared crock pot and spread it out evenly.

Step 4

In a separate small bowl, combine the brown sugar and the remaining cocoa powder. Sprinkle this mixture evenly over the batter in the crock pot.

Step 5

Slowly pour the hot water over the top of everything. Do not stir. This will look strange, but it ensures the pudding layer forms properly.

Step 6

Cover the crock pot with its lid and cook on HIGH for 1 hour and 45 minutes to 2 hours, or until the top of the cake looks set and slightly firm to the touch. The pudding-like layer will form underneath.

Step 7

If desired, sprinkle chocolate chips over the cake during the last 15 minutes of cooking. Replace the lid to allow the chips to melt.

Step 8

Once done, turn off the heat and let the cake sit for about 10 minutes. Serve warm by scooping portions into bowls, making sure to get both the cake and the pudding sauce underneath.

Step 9

Top with whipped cream or ice cream, if desired, and enjoy your decadent Crock Pot Chocolate Pudding Cake!
