Ingredients

  • 2 lbs Ground beef (85% lean)
  • 1 cup Panko breadcrumbs
  • 2 pieces Chipotle peppers in adobo sauce
  • 2 tbsp Adobo sauce
  • 2 large Eggs
  • 0.25 cup Milk
  • 3 cloves Garlic
  • 1 medium White onion
  • 0.5 cup Ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Brown sugar

Directions

Step 1

Finely chop the chipotle peppers, mince the garlic, and finely dice the white onion. Set aside.

Step 2

In a large mixing bowl, combine the ground beef, panko breadcrumbs, eggs, milk, chipotle peppers, adobo sauce, garlic, onion, Worcestershire sauce, ground cumin, smoked paprika, salt, and black pepper. Mix gently with your hands until evenly incorporated, but do not overmix to avoid a dense meatloaf.

Step 3

Line the crock pot with a sheet of parchment paper for easy removal, or spray the interior with non-stick cooking spray.

Step 4

Shape the meat mixture into a loaf shape and place it in the crock pot.

In a small bowl, mix the ketchup and brown sugar to make the glaze. Spread half of the glaze evenly over the top of the meatloaf.

Carefully remove the meatloaf from the crock pot using the parchment paper and transfer it to a cutting board. Let it rest for 10 minutes before slicing.
