Ingredients

  • 6 pieces Boneless, skinless chicken thighs
  • 20 oz Pineapple chunks (canned, in juice)

  • 3 tbsp Honey
  • 2 tbsp Rice vinegar
  • 3 pieces Garlic cloves, minced
  • 1 tbsp Ginger, freshly grated
  • 2 tbsp Cornstarch
  • 3 tbsp Cold water
  • 2 stalks Green onions, sliced (optional, for garnish)
  • 1 tbsp Sesame seeds (optional, for garnish)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Place the boneless, skinless chicken thighs in the bottom of your crock pot in an even layer.

Step 2

Drain the juice from the canned pineapple into a bowl and set the pineapple chunks aside. Add the soy sauce, honey, rice vinegar, minced garlic, grated ginger, salt, and black pepper to the pineapple juice. Whisk to combine.
