Ingredients

  • 2 pieces Chicken breasts
  • 1 cup Uncooked wild rice
  • 2.5 cups Chicken broth
  • 1 can (10.5 ounces) Cream of mushroom soup
  • 2 medium Carrots, diced
  • 2 pieces Celery stalks, diced
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded cheddar cheese (optional, for topping)

Directions

Step 1

Dice the carrots, celery, onion, and mince the garlic. Set aside.

Step 2

Heat the olive oil in a skillet over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for 5 minutes until the vegetables soften slightly.

In a crock pot, add the uncooked wild rice, the sautéed vegetables, chicken broth, and cream of mushroom soup. Stir to combine.
