  • 2 pounds Boneless, skinless chicken thighs

  • 1 medium Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken broth (low sodium)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 1 piece Bay leaf
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Heat olive oil in a large skillet over medium-high heat.

Step 2

Season chicken thighs with 1 teaspoon salt and 1/4 teaspoon black pepper.

Step 3

Sear chicken in the skillet for about 3-4 minutes per side, or until golden brown. Transfer the chicken to the crock pot.
