  • 1.5 pounds boneless, skinless chicken thighs

  • 3 celery stalks

  • 3 garlic cloves
  • 4 cups chicken broth
  • 14.5 ounces canned diced tomatoes
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Dice the potatoes into 1-inch cubes. Slice the carrots and celery into 1/2-inch pieces. Chop the onion and mince the garlic.

Step 2

Heat the olive oil in a skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes on each side until lightly browned, then transfer them to the crock pot.

Step 3

Add the chopped potatoes, carrots, celery, onion, and minced garlic to the crock pot.

Pour in the chicken broth and canned diced tomatoes (with their juices).
