Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup white rice (uncooked)
  • 2 cups chicken broth
  • 2 cans (10.5 oz each) cream of chicken soup
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Lightly grease the inside of your crock pot with non-stick spray or a small amount of butter.

Step 2

Place the chicken breasts in an even layer at the bottom of the crock pot.

Step 3

In a small mixing bowl, whisk together the chicken broth, cream of chicken soup, paprika, dried thyme, salt, and black pepper until well combined.

Step 4

Pour the soup mixture evenly over the chicken breasts.

Step 5

Add the diced onion, minced garlic, carrots, and celery around the chicken in the crock pot.

Step 6

Rinse the rice under cold water until the water runs clear, then sprinkle it evenly over the vegetables in the crock pot.

Step 7

Dot the top of the rice and vegetables with the butter, broken into small pieces.

Step 8

Cover the crock pot with the lid and cook on HIGH for 3 1/2 to 4 hours, or until the chicken is fully cooked and the rice is tender.

Step 9

Once cooked, shred the chicken using two forks inside the crock pot or serve the chicken breasts whole, as preferred.

Step 10

Gently stir the rice, ensuring it is evenly coated with the creamy sauce.

Step 11

Garnish with chopped parsley before serving. Serve warm and enjoy!
