Ingredients

  • 6 pieces bone-in, skinless chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 pieces garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 28 ounces canned diced tomatoes with juice
  • 0.5 cup chicken broth
  • 0.5 cup pitted Kalamata olives
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs evenly with salt and black pepper on both sides.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Once hot, sear the chicken thighs for 2-3 minutes on each side, or until golden brown. Transfer the seared chicken to the crock pot.

Step 3

In the same skillet, add the diced onion and cook for 3 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic, dried thyme, and dried oregano to the onions and cook for an additional 1 minute until fragrant. Transfer this mixture to the crock pot.

Step 5

Pour the canned diced tomatoes and their juice over the chicken in the crock pot. Stir in the chicken broth, Kalamata olives, and capers.

Step 6

Cover the crock pot with the lid and cook on LOW for 6 hours, or until the chicken is tender and fully cooked through.

Step 7

Before serving, sprinkle the dish with freshly chopped parsley for a vibrant garnish.

Step 8

Serve hot with crusty bread, rice, or roasted vegetables for a complete meal.
