Ingredients

  • 6 pieces Chicken thighs (bone-in, skinless)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 0.5 cup Dry white wine
  • 1 14-ounce can Diced tomatoes (with their juice)
  • 0.5 cup Chicken broth
  • 0.5 cup Kalamata olives (pitted and halved)
  • 1 teaspoon Herbes de Provence
  • 1 piece Bay leaf
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 2-3 minutes per side until golden brown. Transfer to the crock pot.

Step 3

In the same skillet, add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.
