Ingredients

  • 2 pounds chicken thighs, beef stew meat, or pork shoulder (choose one)
  • 2 cups green chiles (Hatch or Anaheim, roasted and chopped)
  • 3 medium russet potatoes, peeled and diced
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 4 cups chicken or beef broth (depending on the protein)
  • 1 15-ounce can diced tomatoes (canned, with juice)
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 lime wedges, for serving
  • 0.25 cup fresh cilantro, chopped (optional)

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Sear the chicken, beef, or pork pieces in the skillet until browned on all sides, about 2-3 minutes per side. Transfer the meat to the crock pot.

Step 3

Add the diced onion and minced garlic to the same skillet and sauté for 2-3 minutes until fragrant. Transfer to the crock pot.

Step 4

Add the diced potatoes, roasted green chiles, diced tomatoes (with juice), cumin, oregano, salt, and black pepper to the crock pot.

Step 5

Pour in the broth, ensuring the ingredients are mostly submerged. Stir to combine.

Step 6

Cover the crock pot with its lid and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the meat is tender and the potatoes are cooked through.

Step 7

Once done, taste and adjust seasoning if needed.

Step 8

Serve the stew hot, garnished with fresh cilantro if desired and accompanied by lime wedges for an extra burst of flavor.
