Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 4 cups Chicken broth
  • 1 can (10.5 oz) Cream of chicken soup
  • 2 cups Frozen mixed vegetables
  • 1 medium Yellow onion, diced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 can (16 oz) Refrigerated biscuit dough
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Place the chicken breasts at the bottom of the crock pot.

Step 2

Pour the chicken broth over the chicken, followed by the cream of chicken soup. Stir gently to combine.

Step 3

Add the frozen mixed vegetables, diced onion, salt, black pepper, and garlic powder to the crock pot. Stir everything to evenly distribute the ingredients.

Step 4

Cover and cook on low for 5 hours, or until the chicken is fully cooked and tender.

Step 5

Once the chicken is cooked, use two forks to shred it directly in the crock pot, or remove it, shred, and return it to the pot.

Step 6

Open the can of biscuit dough and cut each biscuit into quarters to create small dumplings.

Step 7

Add the biscuit pieces to the crock pot, pushing them gently into the liquid to ensure they soak up the broth.

Step 8

Cover and cook on high for 1 additional hour, or until the dumplings are cooked through and fluffy.

Step 9

Stir gently to combine, being careful not to break apart the dumplings.

Step 10

Serve hot, garnished with chopped parsley if desired.
