Ingredients

  • 1.5 lbs chicken thighs (boneless, skinless)

  • 4 cups chicken broth (low sodium)
  • 14.5 oz canned diced tomatoes (with juice)
  • 2 tbsp tomato paste
  • 0.25 cup vegetable oil
  • 0.25 cup all-purpose flour
  • 1 cup okra (frozen, sliced)
  • 1 tsp gumbo file powder (optional)
  • 0.25 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups white rice (cooked, for serving)

Directions

Step 1

Season the chicken thighs with salt and pepper. Set aside.

Step 2

In a medium skillet, heat the vegetable oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it becomes a rich caramel color, about 8-10 minutes. Be careful not to let it burn.

Transfer the roux to the crock pot.
