Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts
  • 2 large Carrots, diced
  • 2 Celery stalks, diced
  • 1 medium Yellow onion, diced
  • 4 cups Chicken broth
  • 10.5 oz can Cream of chicken soup
  • 0.5 tsp Dried thyme
  • 0.5 tsp Dried rosemary, crushed
  • 0.5 tsp Garlic powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 7.5 oz can Refrigerated biscuit dough
  • 1 cup Frozen peas
  • 1 tbsp Chopped parsley (optional, for garnish)

Directions

Step 1

Place the chicken breasts in the bottom of your crock pot.

Step 2

Add the diced carrots, celery, and onion on top of the chicken.

Step 3

Pour in the chicken broth and cream of chicken soup. Stir gently to combine.

Step 4

Sprinkle in the thyme, rosemary, garlic powder, salt, and pepper. Stir again to evenly distribute the seasonings.

Step 5

Cover the crock pot with the lid and cook on HIGH for 4 hours or LOW for 6-8 hours, until the chicken is cooked through and tender.

Step 6

Once cooked, carefully remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crock pot.

Step 7

Stir in the frozen peas.

Step 8

Cut the refrigerated biscuit dough into small bite-sized pieces (roughly 1-inch pieces) and layer them on top of the mixture in the crock pot.

Step 9

Push the biscuit dough down slightly so that it soaks up some of the broth.

Step 10

Cover the crock pot and cook on HIGH for an additional 1-1.5 hours, until the biscuits are puffed up and cooked through.

Step 11

Gently stir to distribute the dumplings throughout the dish.

Step 12

Serve hot, garnished with chopped parsley if desired. Enjoy!
