Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Vegetable oil or olive oil
  • 15 ounces Canned tart cherries in water (unsweetened)
  • 0.5 cup Cherry preserves
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Orange zest
  • 0.25 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Season the chicken breasts with salt and pepper on both sides.

Step 2

Heat the vegetable or olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes on each side until lightly browned. Remove and set aside.

Step 3

Drain the canned cherries, reserving 1/4 cup of the liquid. Add the cherries, reserved liquid, cherry preserves, balsamic vinegar, orange zest, cinnamon, and nutmeg to the crock pot. Stir to combine.

Step 4

Place the seared chicken breasts into the crock pot, nestling them into the cherry mixture. Ensure the chicken is coated with the sauce.

Step 5

Cover the crock pot and cook on low for 4 hours or until the chicken is tender and cooked through (internal temperature of 165°F).

Step 6

Once cooked, carefully remove the chicken and set it on a serving platter. Tent with aluminum foil to keep warm.

Step 7

In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the cherry sauce in the crock pot and cook on high for an additional 5-10 minutes, or until the sauce thickens.

Step 8

Spoon the cherry sauce over the chicken breasts. Garnish with chopped fresh parsley, if desired, and serve immediately.
