Ingredients

  • 4 pieces Bone-in pork chops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Cherry preserves
  • 2 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 2 cloves Minced garlic
  • 1 teaspoon Dried thyme
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Season both sides of the pork chops with salt and black pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the pork chops for 2–3 minutes on each side, until browned. Remove from skillet and set aside.

Step 3

In a medium bowl, whisk together the cherry preserves, soy sauce, brown sugar, apple cider vinegar, minced garlic, and dried thyme to create the sauce.

Step 4

Place the seared pork chops in the bottom of the crock pot in a single layer.

Step 5

Pour the cherry sauce mixture over the pork chops, ensuring they are evenly coated.

Step 6

Cover the crock pot with the lid and cook on low for 6–7 hours or on high for 3–4 hours, until the pork chops are tender and fully cooked (internal temperature of 145°F).

Step 7

Once cooked, transfer the pork chops to a serving plate and cover with foil to keep warm.

Step 8

In a small bowl, mix the cornstarch with water to create a slurry. Turn the crock pot to high and stir the slurry into the sauce. Let it cook for 5–10 minutes, or until the sauce thickens.

Step 9

Spoon the thickened sauce over the pork chops and garnish with fresh parsley if desired.

Step 10

Serve with your favorite sides, such as mashed potatoes or roasted vegetables.
